Creamy Chicken Enchiladas

I really love Mexican type food.  It is a type of food that I could make almost every day and not get sick of it.  One of my favorite meals to make is Creamy Chicken Enchiladas.

– 10 small flour tortillas (you may substitute corn tortillas)

– 2 1/2 cups shredded chicken

– 3 cups shredded Pepper Jack Cheese (divided)

– 1 tsp chili powder

– 1 tsp ground cumin

– 1/2 tsp garlic powder

– 1/8 tsp cayenne pepper

– 1 cup sour cream

– 1 cup taco sauce

– 4oz can diced green chilies


Preheat oven to 350 degrees

Mix shredded chicken, 1 cup of cheese, chili powder, ground cumin, garlic powder, and cayenne pepper.

Fill tortillas with the above mixture and roll each one then place in a greased 9×13 pan.

Mix sour cream, taco sauce, green chilies and remaining cheese.

Pour above mixture over enchiladas.

Bake in oven for 20-30 minutes or until bubbly.
